RESTAURANTS
• LA PINÈDE
A bistro for lunch and dinner.
For relaxed lunchtime meals by the beach and delicious dinners in the evening on the terrace under the pine trees. Unabashed hedonism with very simple yet nonetheless inspired Mediterranean cuisine…
A mouth-watering menu, radiating warmth and sunshine, featuring the finest southern products and amazing produce from the kitchen garden. There is a hint of Italy on some evenings, with a choice of delicious, classic pasta dishes, and soft yet crisp Modena crescentine, to be garnished with a variety of fillings.
For pudding, light and original desserts and, as always, the delicious home-made ice creams and sorbets.
• PANZAROTTI
An Italian breeze takes over the beach bar every evening!
Find a simple and tasty cuisine based on the best transalpine products associated with vegetables from the vegetable garden and that of Murtoli in a symphony of flavors: the Milanese veal cutlet, the spaghetti with pistachios, the carpaccio of Mediterranean prawns or the chocolate and olive oil bruschetta are literally to die for!
The restaurant is open from June to September, depending on the weather.
• I PIATTINI
A menu of small sharing dishes. For dinner, at the bar, in the gardens or in the beach.
Piattini (Corsican tapas) in the form of sharing platters are served in the gardens: semolina rice with botargo; crescentine stuffed with mozarella and confit tomato, prawn carpaccio with fresh herb oil, tender octopus pan-fried with garlic and citron, and sweet treats of the day, to enjoy with a glass of wine or a house cocktail.
• THE INDOOR BAR
In the heart of the hotel, with its superb terrace set in greenery and smoking room with immaculate linen curtains, this is the place to relax at the end of the day.
As the sun sets, tranquillity returns, interrupted as you draw closer by the clinking of shakers heralding treats in store.
If you are a whisky, gin or rum lover, a bartenders will be delighted to present their highly specialised collections, featuring the world’s finest names. For smokers, there is an excellent selection from Cuba.
And during concert events, or for evenings when you feel a little peckish, you can prolong the pleasure by choosing piattini, plates to share, accompanied by excellent local wines.
• THE BEACH BAR
On the waterfront, entirely built from wood, it’s the place to be! For a morning coffee, facing the sea as the bay slowly awakens, for a peaceful look at the day’s news, for a large glass of rosé on ice at aperitif time, for gourmet and ice-cold teatime treats, for a coupe of champagne at sunset.
• LA TISANERIE
Every sunny morning under the Cala Rossa gazebos in the garden, complimentary natural drinks with abundant therapeutic virtues, created by the “home-made” brand Nucca, are offered for you to slake your thirst or to enjoy during a moment of meditation.
The warm beverages are served in small, stylish thermos flasks, while recyclable cups and straws are used for the cold refreshments. The gentle magic of these blends offers relaxation, purification and properties to boost slimming and blood circulation.
• THE GARDEN
Cala Rossa’s kitchen garden is quite simply amazing. A paradise of vegetation a few metres from the kitchens, encouraging and enhancing gourmet creativity.
Landscape architect Philippe Niez, a poet of the senses and the emotions, was inspired by the Mediterranean basin’s outstanding natural environment to design a deliciously sensual and prolific garden. Surrounded by mimosa and tamarisk, lavender and fig trees stand side by side with aromatic herbs, tomatoes, aubergines, rocket, mangetout and a multitude of other species…
The aim is to attract pollinating insects, with a method that uses straw and compost to protect the soil microfauna, obtaining an entirely organic vegetable garden.
The rewards are apparent, since this kitchen garden has become a marvellous setting for meditation and exploration. The oyster flavoured mertensia maritima grows here, along with turmeric, ginger and Sichuan pepper; at the end is a circle of citrus teas (citron, kaffir lime, limequat, Buddha’s hand fruit and the rare finger lime, or citrus australasica…)
Before sunset, the chef’s assistants appear as if in a culinary dream to gather borage flowers, herba-barona thyme, lesser calamint, raspberries and wild strawberries to complement the chefs’ dishes.

SPA
The Nucca Spa, a universe both intimate and bright (over 500 m²) includes: 7 treatment cabins built in a row along wooded patios and teak passageways, nail salon, the Léonor hair salon Greyl & VP, herbal tea room, swimming pool, sauna and a hammam. This space, completely redesigned in 2022, is exclusively reserved for adults.
