Since its opening in 2009, Verdura Resort has been synonymous with Sicily and its nature. Encompassing an area of over 230 hectares, the 203 rooms and suites display an elegant and graceful balance between architecture and the environment by reshaping the land in a respectful and minimal way and incorporating the surroundings as much as possible. This architectural concept is still the foundation of this year’s refurbishment, overseen by Rocco Forte Hotel’s Director of Design, Olga Polizzi. The meticulous renovation, which involves most of the Resort’s rooms across all categories, brings a fresh and contemporary look and feel but keeps its roots firmly in Sicilian traditions. The rooms reflect the traditional appeal of the Mediterranean with style and sensitivity. From the yellow, orange and russet tones to the contrasts between light and shade, and from local elements such as stone and wood to handcrafted ceramics and linens, the new rooms are faithful to the materials, colours, construction techniques and the laws of nature of the island's spirit.

RESTAURANTS
• AMARE
There are seafood restaurants and then there’s Amare. Walk across the sand and step inside, listening as the waves lap against the shore, and settle in for a night of sublimely fresh seafood on the beachfront.
Located on the beachfront with a lively cooking station, Amare serves the finest local produce. Fresh fish and seafood. Barbequed meats. Sample the restaurant’s specialty, ‘crudo’, served for generations in Sicilian fishing villages. Thinly sliced catch of the day with extra virgin olive oil, citrus fruits and a pinch of rock salt. Busiate with shrimps and pistachio.
• LIOLA
With a colourful dining room that celebrates and showcases local artisanal crafts, and an outdoor terrace that looks out over the Sicilian coastline, Liolà is a stunning setting, whether you’re enjoying a romantic clifftop dinner for two or a lively family feast.
Relaxed and rustic, Liolà is a typical Sicilian trattoria. The restaurant has its own pizzeria and a large outdoor terrace, offering stunning clifftop views over the sea. The menu is simple yet enticing. Sicilian Caponata. Arancini and Pannelle. Sicilian Pasta alla Norma. Sicilian pizza with tomatoes, breadcrumbs, pecorino cheese, salami and basil.
• ZAGARA
Named for the fragrant orange blossom that scents the estate, Zagara restaurant is a unique expression of place, with a menu that revels in the flavours and ingredients of the Mediterranean.
With a glamorous dining room and an atmospheric outdoor terrace that offers views out towards the sea, Zagara combines elegant design and the natural beauty of Verdura to stunning effect.
Fulvio Pierangelini has created an outstanding menu with Executive Chef, showcasing the abundant natural produce of the island – olive oil, oranges, lemons, freshly caught fish, tomatoes and much more – accompanied by a fine selection of Sicilian and International wines.

BARS
• GRANITA
Warm and inviting, Granita Bar is open throughout the day for tapas-style Mediterranean dishes and regional specialties, alongside a range of expertly-mixed cocktails that are unique to Verdura.
Try a “Sicilian Mojito”, made with fresh citrus picked on the property and squeezed straight into the glass, mixed with dark rum and plenty of local mint. Or sample one of the sensational martinis, made with the bar’s unique infused vermouths.
When aperitivo approaches, retire to watch the sunset over the Mediterranean with a Spritz Siciliano in hand, made using fresh orange juice, Aperol, and local sparkling wine.
• POOL BAR
Stretch out on a chaise lounge by the pool and enjoy a delicious selection of refreshments and classic dishes for lunch.
With the glittering expanse of the Mediterranean on one side and the serene glamour of 60-metre infinity pool on the other, the Pool Bar is ideally placed for refreshing drinks and delicious food.
Offering a tantalising selection of classic comforts during the day - from juicy beef burgers to restorative salads, hearty sandwiches and scoops of fresh, creamy gelato - and a mouth-watering menu of grilled meats at Fulvio Pierangelini’s Focu dinners (as well as live music and dancing by the pool), The Pool Bar offers a relaxed alternative to Verdura’s other dining destinations.
• BREAKFAST
Enjoy your breakfast with a side of Sicilian sunshine and views out over the Mediterranean. With a spacious, light-flooded indoor dining room and an outdoor terrace that spills out towards the stunning infinity pool, Buongiorno is a sensational place to start the day.
Order a la carte, requesting a fresh omelette from the chef’s station or indulging in the Sicilian treat of granita - made with fruits from the Verdura estate - and brioche. Taste the freshly-baked cakes and pastries, local cured meats and cheeses, and be sure to enjoy a glass of freshly-squeezed juice from Verdura oranges.

SPA
Verdura Spa is a place dedicated to wellbeing and relax. Housed in pavilions grouped around an open-air courtyard, 4,000 square metre Verdura Spa has: Extensive treatment rooms including double treatment suites; 4 outdoor thalassotherapy pools; 20m indoor swimming pool; Double-height steam room, along with Finnish and infrared saunas; 170m2 state-of-the-art gym and fitness studio; Spacious relaxation areas; Hair and beauty salon; Spa Bar with a terrace overlooking the mountains.

GOLF
Test your swing on one of the stunning golf courses, designed by acclaimed international firm, Kyle Phillips. Famed for courses like Kingsbarns Golf Links in Scotland, Phillips have crafted two 18-hole championship courses and a nine-hole par-3 course from the stunning coastal scenery at Verdura. Providing challenges and an incredible backdrop, with the Mediterranean visible from almost every hole, the courses offer something for every golfer, whether you’re looking to learn from a PGA professional, polish your skills, or simply spend a spectacular afternoon on the fairways.
Renovated and restored under the expert supervision of original course architect, Verdura’s East Course provides plenty of unforgettable moments throughout the round.
